Tortellini Chicken Soup
Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 1/4 tsp Dill
- 1 tbsp Italian Seasoning Mix
- 1 tsp Paprika
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 5 oz Baby Spinach
- 4 oz Crumbled Feta
- 4 oz Heavy Cream
- 32 oz Vegetable Broth
- 1 Package Tortellini Pasta
- 28 oz Crushed Tomatoes
- 1 Yellow Onion
- 1 tsp Minced Garlic
- 3 cups Shredded Chicken Breast
- Water (as needed)
Instructions
- Saute Onion in pot with olive oil and minced garlic around 5 minutes.
- Add Crushed tomatoes, vegetanle broth, shredded chicken, tortellini, seasonings. Bring to a boil and cook for around 10 minutes or until tortellini is almost done.
- Add feta, spinach, and heavy cream. Cook until spinach is wilted, around 5 minutes. Taste to see if more seasoning is needed, add if desired.
