Tortellini Chicken Soup

Ingredients
  

  • 1 tbsp Extra Virgin Olive Oil
  • 1/4 tsp Dill
  • 1 tbsp Italian Seasoning Mix
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 5 oz Baby Spinach
  • 4 oz Crumbled Feta
  • 4 oz Heavy Cream
  • 32 oz Vegetable Broth
  • 1 Package Tortellini Pasta
  • 28 oz Crushed Tomatoes
  • 1 Yellow Onion
  • 1 tsp Minced Garlic
  • 3 cups Shredded Chicken Breast
  • Water (as needed)

Instructions
 

  • Saute Onion in pot with olive oil and minced garlic around 5 minutes.
  • Add Crushed tomatoes, vegetanle broth, shredded chicken, tortellini, seasonings. Bring to a boil and cook for around 10 minutes or until tortellini is almost done.
  • Add feta, spinach, and heavy cream. Cook until spinach is wilted, around 5 minutes. Taste to see if more seasoning is needed, add if desired.
